I first fell in love with baking when I took a baking class in high school. It was always so fun being able to bake new creations and explore with different ingredients.

Another thing I fell in love with was decorating – with frosting and sprinkles, of course. I probably have more baking supplies than the average college student. So much so that I could only bring half of those supplies to school because they would have taken over my entire kitchen. The one thing I made sure to bring was my KitchenAid stand mixer, which I love so much.

Cupcakes are my favorite thing to bake because there is always a different way to make them. The fun thing about this favorite is that they are just mini-personal cakes.

I also love that I can decorate each one individually; a display of cupcakes is much more appealing than just a frosted cake.
It was definitely hard to choose which recipe to make, but I think brownie cupcakes are a definite must in this situation because they are easy to make, soft and moist.

Since both brownies and cupcakes are mixed into the creation, it gives you more than what just a plain cupcake or brownie would give you. It is the best of both worlds.

First preheat oven to 350 degrees.

What you will need:

1 Package brownie mix
2 Eggs
½ Cup Canola Oil
¼ Cup Water
1 Package White Cake Mix
2 Tablespoons Canola Oil
1⅓ Cups Water
3 Egg Whites
Cupcake Liners
Your Choice of Frosting

To Make Brownie Mix:

Whisk together brownie mix, 2 eggs, 1/2 cup canola oil and ¼ cup water in a bowl, then set aside.

To Make Cake Mix:

Mix the cake mix, 2 tablespoons canola oil, 1 1/3 cups water and 3 egg whites in a bowl. (You can either do this by hand or with an electric mixer on low.)

Spoon the brownie batter into the cupcake liners, filling each about 1/3 full. Fill the rest of the cupcake liners with cake batter. Bake in the oven until golden on top, which should be about 20 minutes.

You want to make sure to let the tops of the cupcakes get golden. This lets you know the brownies are probably done. Once cooled, frost and decorate however you wish. Enjoy.
